What does it mean to be a Chef?
The Executive Chef is the CEO of the kitchen. He is the boss who makes the most important decisions such as determining the menu, the cooking process, and presentation. A Chef does not work by himself. Under him work various Sous Chefs. They are very well trained individuals in charge of specific areas such as appetizers or pastries. Other people you will find in a kitchen are the cooks. The cooks are generally less trained than a chef and might not have an advanced cooking degree. How to become a Chef
Chefs traditionally used to train in large restaurant or hotel kitchens. Training and education was exchanged for carrying out menial kitchen work such as vegetable washing and peeling, or cleaning ovens. The hours were long, the work hard, the pay pretty bad, and the education entirely dependant on how much time the head chef had to train.
There are still roles such as these available, but this is no real substitute for a proper culinary education at culinary college designed to teach you everything you need to know to earn a chef degree.
A dedicated culinary arts education is designed to teach you the basics of food hygiene, how to check for good quality, kitchen management, menu design, and kitchen economics as well as the fundamentals of cooking techniques and food science. You may learn how to prepare, boil, broil, roast, bake, steam, flambé or poach. You will learn how these techniques differ and how different foods react to these methods of preparation. Once you have mastered these basic techniques at culinary institute, you may go on to combine these methods in creating simple dishes, or preparing sauces. Your culinary school experience may be further extended by studying particular regional or national cooking such as French cuisine or oriental culinary art.
Your culinary education will not guarantee you a culinary career. You will still need to practice what you have learned and be prepared to continue studying under a head chef in order to become one yourself. You may prefer however to specialize in a particular area such as becoming a pastry chef or sauce chef rather than competing to become one of very few executive chefs.
The next step to become a Chef
Almost all Chefs learn to be chefs as they receive education from a Culinary Educator. Culinary educators are chefs who specialize in teaching other chefs how to cook. Cooking schools and hotel/hospitality schools employ culinary educators. They possess a wide range of skills including menu conception, kitchen planning and organization, staff management, and hors d’oeuvres.
